De jak (voorheen geschreven als yak) is een rundersoort welke voornamelijk in de Himalaya leeft. De melk van de jak wordt op ouderwetse wijze gestold, van water gescheiden en vervolgens in jute geperst. Hiervan is vaak nog de afdruk te zien op de botten zelf! Na dit proces worden de Yakka’s gerookt, wat ze de enorm lekkere smaak geeft. Hierna worden de Yakka’s gereinigd en in een laboratorium gecontroleerd.
